a little lunch experiment...
Goooood morning!
So when I went to Stop and Shop this past weekend, the raspberries were buy one get one free! So naturally I bought a gazillion. So when I was packing my lunch today I felt inspired to experiment a little.
Here is what my lunch consists of today:
-I have a yogurt with chocolate and almond granola
-My Libbified sandwich: toasted sandwich bread, whipped cream cheese, and raspberries!
(yes I cut the crust off. And yes they're in the shape of dinosaurs. And yes that's a Spiderman container)
-And lastly cut up apples as a snack for when my stomach inevitably starts eating itself in Calculus.
I can't wait for dinner tonight. BIG yumyums :) Sadly I don't get home from work til 9 so the post won't be til late though. Anyway I'll let you know how my impromptu sandwich tastes!

Shrooms and mush
Ohhhhh mushrooms. Very hit or miss with people, but I love them, so tonight I made stuffed mushrooms.
I made a couple of whoopsies with this one, but they tasted AMAZING nevertheless.
STUFFED MUSHROOMS
-preheat to 375 degrees
-heat 1 tablespoon of butter in a pan with diced mushroom stems and 2 small minced shallots for 5 minutes. I however did not use shallots because I did not have them/had no idea what they were...I also only heated them for about a minute and a half.
-add 1 minced garlic clove and 2 tablespoons of chopped walnuts and a sprinkle of salt. stir for 2 minutes. I bought minced garlic in a spice container, and I accidentally bought hazelnuts instead of walnuts and they tasted delicious
-Then turn off the heat and add 2 tablespoons parsley, 1 teaspoon thyme, and 2 tablespoons bread crumbs.
***I however, did not have thyme, so I read on the interwebs that basil is a substitute for thyme.
-Then coat your portabella mushrooms in olive oil, and fill with the stuffing.
-The recipe calls for a sprinkle of cheese on the top. But I am a cheesy kind of girl, so I took a sandwich slice of mozzarella and laid it over each shroom then put the stuffing on top. There is no such thing as too much cheese.
-Cook in the oven for 20-25 minutes (I took them out after 17 because I thought they were burning...turns out they're supposed to turn that dark. whoops)
and they were SUPER YUMMYYYYY

Peanut Crusted Chicken (Ohh my gawd so gooood)
So...I actually started this endeavor yesterday. I cooked this for a house of track boys, and they all said it was DELICIOUS. All I have to say is don't get intimidated by the ingredient lists of these recipes. That used to be the number one thing to make me not want to cook something. They're all so simple and easy to just toss in.
PEANUT CRUSTED CHICKEN
-pre-heat the oven to 350 degrees
-in a large bowl mix together:
1/4 cup of salt
1 tablespoon of sugar
2 teaspoons of dry mustard (I had no idea what the hell this was, so I just used Dijon)
1 teaspoon of paprika
1/2 teaspoon of white pepper (didn't have this so I just used regular pepper)
4 cups of buttermilk (just used regular milk)
-then take your chicken strips (bought them at Stop and Shop for $4.00) and let them marinate in that bowl of yummies for about 30 minutes.
-About 3/4 cup of crushed peanuts. Since I am super cheap, I bought a bag of peanuts in their shells and just cracked a bunch (while listening to showtunes) then crushed them in a bowl with the butt of a glass.
-Then mix in 2 cups of bread crumbs
-whisk 1 egg in a bowl
once the chicken is done marinating, you take them out, lather them in egg, roll them around in the peanut/breadcrumb concoction, and put them on a pan with aluminum foil underneath!
Let them cook for 20 minutes and VOILA!

Hello all!
My name is Libby and although I am 21 years old (nearly...we're rounding up!), I am hopelessly lost in the kitchen. This year I moved into an apartment, and I made a promise to myself that each day, I would cook at least one recipe. I figured there must be a zillion other college kids in the same predicament, so maybe they'll find this blog and I'll make their lives a little easier. I am broke and inexperienced, so everything I cook is on a college budget and super easy. Anyway I hope some people stumble across this and enjoy!
