So...I actually started this endeavor yesterday. I cooked this for a house of track boys, and they all said it was DELICIOUS. All I have to say is don't get intimidated by the ingredient lists of these recipes. That used to be the number one thing to make me not want to cook something. They're all so simple and easy to just toss in.
PEANUT CRUSTED CHICKEN
-pre-heat the oven to 350 degrees
-in a large bowl mix together:
1/4 cup of salt
1 tablespoon of sugar
2 teaspoons of dry mustard (I had no idea what the hell this was, so I just used Dijon)
1 teaspoon of paprika
1/2 teaspoon of white pepper (didn't have this so I just used regular pepper)
4 cups of buttermilk (just used regular milk)
-then take your chicken strips (bought them at Stop and Shop for $4.00) and let them marinate in that bowl of yummies for about 30 minutes.
-About 3/4 cup of crushed peanuts. Since I am super cheap, I bought a bag of peanuts in their shells and just cracked a bunch (while listening to showtunes) then crushed them in a bowl with the butt of a glass.
-Then mix in 2 cups of bread crumbs
-whisk 1 egg in a bowl
once the chicken is done marinating, you take them out, lather them in egg, roll them around in the peanut/breadcrumb concoction, and put them on a pan with aluminum foil underneath!
Let them cook for 20 minutes and VOILA!
